Green Flash Hop Head Red

4.3/5

AROMA
8/10 APPEARANCE 5/5 TASTE 9/10 PALATE 4/5 OVERALL 17/20

12 ounce bottle. Pours slightly hazy copper-red color with a 2 finger off white head with amazing retention that reduces to a lacing cap. Aromas of caramel, orange, grapefruit, and a bit of toast. Quite nice and fairly strong aromas. Taste of strong caramel, orange, and grapefruit; with some toast and a bit of grass and pine. There is a strong bitterness that comes in on the finish and lingers for a while with grapefruit, and orange flavors. Medium carbonation and body. Very smooth mouthfeel and very drinkable. No alcohol noticed at all in taste, but there was a very slight warming after the finish. Very well balanced with sweetness and bitterness. Overall just a fantastic brew, highly enjoyable.

I have really enjoyed all Green Flash I have had so far. I will be getting some more soon.

AROMA
8/10 APPEARANCE 5/5 TASTE 8/10 PALATE 3/5 OVERALL 16/20

12 ounce bottle. Pours crystal clear orange-amber color with a dense 2 finger off white head with great retention that reduces to a fairly thick lacing cap that lasts the entire glass. Some fairly thick lacing is left on the glass. Aromas of citrus, pine, caramel, and apricot. Aromas were masked when I poured it, but once it started warming up they came out stronger. Taste of caramel and citrus sweetness on the front with slight apricot with a fairly strong bitterness on the finish that lingers with apricot and citrus flavors. It is pretty nice that the apricot flavors are not very strong and the typical IPA taste shines out the most. Medium body and slightly high carbonation. Mouthfeel is a little odd, but it drinks pretty smoothly and easily. No alcohol noticed in taste or finish. Fairly well balanced sweetness and bitterness. Overall this is quite a tasty IPA, and I am glad the apricot was put in to be subtle in the taste.

A nice IPA that most hop heads will enjoy. I had reviewed this before, but I tried it again, and it was much fresher this time around.

AROMA
8/10 APPEARANCE 4/5 TASTE 9/10 PALATE 4/5 OVERALL 17/20

750 ml bottle into tulip. Pours very dark brown almost black color with a fairly dense 1 finger dark tan head with good retention. Aromas of raisins, cherries, bananas, roasted malt, and some chocolate and booze. Fairly strong aromas. Taste of raisins, cherries, roasted malt with some slight booze in the taste. This then leads to a strong taste of milk chocolate on the finish that lingers. No bitterness noticed, but lots of flavor is here, fairly well balanced as well. Medium carbonation and full bodied. Very smooth and creamy feeling during the drink. Some slight alcohol noticed in the taste and a fairly strong warming after finish. Overall this is a very enjoyable Belgian Style Imperial Stout. Lots of nice flavor and balance.

Quite an impressive offering from Weyerbacher. The Belgian style definitely gives the imperial stout an interesting dimension in flavor and aroma. Very unique brew, and tasty as well.

Blue Bunny Red Carpet Red Velvet Cake

Image Hosted by ImageShack.us

It's not often that I do carton ice cream reviews, but this one really blew me away, so I had to do this one. This is actually the first time I have had anything from Blue Bunny, and the extremely high quality of this ice cream makes me interested in seeking out some more flavors. This flavor is a collaboration with Duff Goldman of the TV show Ace Of Cakes off the Food Network. It is red velvet cake flavored ice cream swirled with cream cheese frosting ice cream and red velvet cake pieces. There is a huge amount of cake pieces spread throughout the entire container, and they are highly flavorful. The red velvet cake flavored ice cream is also quite strong and balances well with the cake pieces. The most prominent flavor in the ice cream is the cream cheese frosting ice cream. Definitely strong enough to be noticed the most in this, and is probably my favorite part because I love cream cheese and cheesecake. I have had some pretty weak cream cheese flavored ice cream in the past, but this is exceptional. Surprisingly creamy texture as well that is fantastic. This ice cream is only 150 calories per serving, but it definitely blows the Ben and Jerry's version out out of the water in the flavor and mix-in quantity department. Amazing! The only downside to this flavor is the red food coloring gets all over your fingers, but that is hardly a problem. I will definitely be trying out some other flavors soon, including the other Duff Goldman flavors if I can find them.

10/10 get this flavor!

12 ounce bottle, best before 6/9/11. Pours slightly hazy copper-red color with a dense 2 finger light caramel colored head with amazing retention that reduces to a fairly thick lacing cap. Thick sticky lacing coats the entire glass as you drink. Aromas of rye, caramel, toffee, bread, citrus, and a bit of molasses. Some pretty appealing aromas here, a nice balance. Taste of rye, toast, caramel, citrus, and spices. A prominent bitterness shows up after the finish and lingers for a while with rye and spicy flavors. No alcohol was noticed in the taste, but there is a warming after the finish. Medium carbonation and body. Very smooth drinking as well. Overall this is a great Rye ale, and is very enjoyable stuff.

Tasty beer and my first one from Two Brothers. I will be checking out some more offerings from them soon.

Häagen-Dazs Sweet Chai Latte

Image Hosted by ImageShack.us

Here we have yet another limited edition ice cream from Haagen Dazs. It is basically just a combination of chai tea and ice cream. I have never actually had chai tea myself, but after looking up a definition of it, it says it is tea with a mixture of Indian aromatic spices and herbs. The first thing I thought of when I had this was pumpkin pie, except without the pumpkin of course. Lots of spices here but still very sweet and creamy as well. Lots of cinnamon, clove, and anise on the tasting. Finishes with lingering sweet cream and spices. Just all around great flavor here, with great balance of the spices, which are not too strong at all. Super creamy texture that is fantastic, that I also softened up prior to consumption as usual. Not much else to say here, quite a simplistic flavor with no mix ins, but this tastes fantastic, and I would have expected nothing short of amazing from Haagen Dazs.

Taste of citrus, caramel, pine, and some spices A decent amount of bitterness shows up on the finish that lingers for a bit with citrus and pine flavors. Medium carbonation and body. Very smooth drinking with very nice flavor and no alcohol detected at all. Excellent pale ale from Bear Republic, as expected. Delicious!

Re-reviewing this one, I got a fresher bottle. Turns out that it is delicious when it is fresh and not oxidized.

12 ounce bottle into snifter, best before May 2011. Pours extremely dark brown color with a dense 2 finger tan head with excellent retention that reduces to a thin lacing cap that lasts for the remainder of the glass. Aromas of chocolate, coffee, caramel, and roasted malts; with some light orange and grapefruit notes. Fairly strong aromas as well. Taste of strong roasted dark chocolate, roasted malts, caramel, and molasses. There is not much noticeable bitterness, but there is a little bit on the finish that lingers with some citrus notes and roasted flavors. The taste has a little bit of off flavors, but is fairly well balanced, though not very complex. Medium carbonation and medium full bodied. Very smooth drinking as well, with no noticeable alcohol presence other then a small warming after the finish. Overall this is not bad at all, very good imperial stout!

Not very complex for an Imperial Stout, but this one is definitely good stuff!

750 ml bottle into tulip. Pours dark red-brown color with a huge 3 finger dense off white head with amazing retention that reduces to a lacing cap. Some decent lacing on the glass. Aromas of dark fruits, spices, cherries, banana, raisins, and some slight booze. Fairly strong aromas. Taste of dark fruits, cherry, spices; with some chocolate and molasses. No bitterness at all in the taste or finish, but there is some lingering notes of dark fruits and cherries that last for a good period of time after the finish. The flavors are incredibly well balanced, and for being almost 10% this is drinking incredibly smooth, and is highly enjoyable. Medium carbonation with medium-full body. Overall this is just an outstanding beer. Extremely enjoyable, and very well balanced in flavor. Highly recommended.

I had a feeling I was going to love this because of how much I loved the Dubbel they make. I can't wait to go get some more Ommegang brews. A majority of the lineup is easily attainable near me as well(mostly 750 ml, but the price is great).

Pours dark red-brown color with a huge head at first but afterward it was fully poured it was 2 fingers of dense light tan head with amazing retention that reduces to a lacing cap. Aromas of molasses, roasted malt, toffee, honey, caramel, and some dark fruits. Some very pronounced aromas and well balanced; quite nice. Taste of molasses, caramel, toffee, coffee, roasted malt, and honey. Not too much bitterness here, but there is a slight amount that shows up on the finish that lingers with molasses and roasted flavors. No alcohol was noticed at all in taste or finish. Medium carbonation and body. Very smooth drinking and fairly creamy feeling as well. I don’t have much experience with doppelbocks, but this one was extremely drinkable and highly enjoyable. Definitely recommended.

Fantastic and highly enjoyable brew here. I will have to see what else Ayinger has to offer around me.

Hoppin Frog Hop Dam Triple IPA

4.2/5

AROMA
8/10 APPEARANCE 4/5 TASTE 9/10 PALATE 4/5 OVERALL 17/20

22 ounce bottle into tulip. Pours slightly hazy orange amber color with a dense 2.5 finger off white head with fantastic retention. Some decent lacing is left on the glass. Aromas of caramel, orange, pine, grapefruit, and a bit of maltiness as well. Taste of strong caramel, orange, grapefruit, and pine; with a huge bitterness on the finish that lingers for a long time with caramel, orange, and pine flavors. Bitterness destroys your palate, and after that happens the malty flavors shine through more(strong orange, grapefruit, and caramel). It is very smooth drinking, but is definitely a sipping beer. Medium carbonation and very full bodied. No alcohol was noticed at all, except for a very slight warming after the finish, but overall incredibly hidden here for 10%. Overall, this is some tasty stuff for sure. A true hop head beer.

I got this on release day at the brewery, and it was the middle of march, so this is a pretty darn fresh IPA. With all those hops, I doubt they were going to fade any time soon. The hops were a LOT huger than I remember when I had this one last year(whenever that was). Just a huge beer all together here, it was incredibly smooth and easy to drink as well for being 10%, and the hops destroying your palate and all.

Ben & Jerry's Bonnaroo Buzz

Image Hosted by ImageShack.us

Wow, we have yet another new flavor here. It is coffee and malt ice creams with whiskey caramel swirls and English toffee pieces. Definitely a huge fan of the ice cream base. I loved the coffee ice cream in Heath Bar Crunch, and this is just amazing as far as flavor and texture goes. The coffee flavor is a little more prominent than the malt flavor, but either way the ice cream base wins completely. The whiskey caramel is well spread throughout the pint, and is very strong in flavor, yet compliments the ice cream base very nicely. The English toffee pieces are none other than Heath Bars, and they are really well sized throughout this pint. About the size of the width of a spoon. Yet another very good compliment to the base ice cream, and adds great texture as well. Also makes it a bit difficult to dig in, but I am not even upset about that. I also microwaved this prior to consumption to soften it up, and it really brought out fantastic ice cream texture. Some of the best Ben & Jerry's texture as of yet. Definitely one of the top Ben and Jerry's flavors for me.

Some fairly nice glass lacing is present around the entire glass. Aromas of caramel, orange, grapefruit, pine resin, and some spiciness. Aromas are quite nice and fairly strong. Taste of strong pine, grapefruit, and orange; with some caramel and a fairly pronounced bitterness on the finish that lingers for a good period of time with some spiciness and citrus flavors. Very smooth mouthfeel and very nice balance of bitterness and sweetness. Medium carbonation and medium body. Overall, this is a great IPA, definitely lives up to it’s hype.

Definitely a great IPA, glad I picked one up when I was down in Columbus. I will have to pick up a 6 next time I am down there. If anyone ever goes down to Columbus, the brewery is available pretty much everywhere, was not a hard find.

Aromas of caramel, bourbon, dark fruits, cinnamon, and some honey. Taste of oak, bourbon, caramel, roasted malt, and molasses. Fairly dry finish, but there is some lingering flavors of bourbon, caramel, and dark fruit sweetness that lasts for a decent period after the finish. No real significant amount of bitterness was noted, but there was a small amount. Medium carbonation and medium-full bodied. Very smooth drinking with minimal alcohol noticed, only a small warming after the finish. Overall quite a tasty scotch ale we have here. Good stuff.

I had a Double IPA before this bottle, and it started off with no flavor, because of my palate being toasted haha. After a bit the flavors came through and it was highly enjoyable.

Taste of vanilla, toffee, caramel, roasted malt, chocolate and coffee. Very little bitterness was noticed, except for well after the finish, where a slight bitterness showed up. There is a lot of roasted flavor with vanilla, chocolate, and some coffee that lingered after the finish. Very smooth and creamy full body with medium carbonation. Alcohol is well hidden, with only a small warming after the finish noticed. Highly drinkable for an Imperial Stout. Overall this is definitely a fantastic Imperial stout, delicious!

Medium carbonation and a medium-full body. Alcohol is well hidden, nothing was noticed except for a very small warming after the finish. Overall, this is a solid DIPA, it just didn’t wow me.

Solid DIPA. Also I will note that I finally got my hands on a Duvel Tulip, which is in the picture(logo reversed). Probably the greatest glass I have ever seen and held. Such a solid piece of glassware.

Häagen-Dazs Banana Split

Image Hosted by ImageShack.us

Decided to take a little brek from the new releases to have one of the classic Haagen Dazs flavors. It is whipped cream and banana ice creams with rich fudge and pieces of strawberries and cherries. When I opened it, the plastic cover was actually partially busted through, but I still rolled with it. The ice creams are very creamy, with very pronounced flavor. Great texture as well, though I was afraid it might be freezer burned with the seal being broken, but it is fine. The fudge is quite viscous, and is very rich and chocolatey. The fudge is also very well distributed through the pint, there is plenty of it for every spoonful. The strawberry and cherry pieces are quite small, but are still very noticeable, and impart great flavor and texture. They are also well distributed through the pint and are numerous. Overall not much else to say about this, except that it is a perfect choice if you are craving a banana split, as it replicates the experience pretty much perfectly.

Fairly dry finish, but there is some slight spicy and fruity sweetness that lingers for a brief period after the finish. No bitterness detected in this as well. Medium carbonation and body, has a good mouthfeel for a Belgian style. Overall, this is quite an enjoyable Belgian style from Great Divide.

I seem to be quite happy with all of the Great Divide offerings I have had, especially with Yeti which blew my mind. I can't wait to have some more offerings!

Ben & Jerry's Late Night Snack

Image Hosted by ImageShack.us

We have yet another new flavor here. Late Night snack is vanilla bean ice cream with a salty caramel swirl and chocolate covered potato chip clusters. This flavor was inspired by the Late night with Jimmy Fallon show, and a few weeks ago then actually unveiled it on his show, and I saw it that night. Onto the ice cream now. The ice cream itself is extremely rich in vanilla flavor, as it is shown to be vanilla "bean" ice cream and not just regular vanilla ice cream. Great stuff there. There are plenty of the chocolate covered potato chip clusters throughout the pint, and are extremely crunchy and impart a great texture to the pint, along side adding a nice saltiness, which is not a bad thing at all. Sweet and salty can be very good together. Finally we have the salty caramel swirl, and there is definitely enough of it in here to satisfy my love for caramel. Just a fantastic combination here of salty and sweet tastes. The ice cream texture is downright outstanding, very creamy and delicious all together. I also softened it up in the microwave of course. Overall this is fantastic stuff, and is a very unique ice cream flavor indeed.

22 ounce bottle. Pours a thick very dark brown color with a dense 1 finger tan head with great retention that reduces to a lacing cap that lasts for the remainder of the glass. Some fairly nice glass lacing as well. Aromas of chocolate, coffee, oat, caramel, roasted malts and some light citrus notes and dark fruits. Also some very light alcohol aromas were detected. Some fairly strong aromas here. Taste of strong oats, chocolate, and roasted malts on the front with some espresso afterwards; with a fairly well noticeable bitterness on the finish that lingers for a brief period with chocolate and roasted flavors. No alcohol noticed in the taste, but there was a very slight warming after the finish, but otherwise very well hidden for the alcohol level. It has a full creamy body with medium carbonation. Overall this is definitely a great Oatmeal stout and is highly enjoyable!

Definitely a good one. Southern Tier has been hit and miss with me, but I will continue to try them. Also may retry some of the ones I did not like as well, I may have just gotten bad or really old bottles.

Third Batch, Robust Porter

Here we go again in the same week. So two of my very good friends are getting married in the middle of next month, and they both like delicious beer. So I asked the groom to be what I should make. He said that there is going to be Stella Artois and Bud Light at the bar for beer, so I should make some kind of light stout or porter. Well, I have been lurking around looking at clone recipes, and I know he likes Great Lakes Edmund Fitzgerald, so I took that clone recipe and made some slight modifications in beersmith. I changed the hops up a bit and added a bit more crystal malt and some black patent. It sure smelled fantastic in the boil.

I also went to my local homebrew supply(Grape and Granary) last week to get some supplies to make this all possible. I already had a 34 qt turkey fryer with propane burner stand around so that was covered. I needed a fermenter, bottling bucket, wort chiller, and a stir spoon. I ended up purchasing a 1 stage bucket ferment kit that comes with all the essentials(primary, bottling bucket, racking cane with siphon hose, bottling wand, capper, bottle brush, caps, and lid with airlock.)

Image Hosted by ImageShack.us

I already had one step sanitizer laying around so the extra sanitizer included is just a bonus, and it is definitely indispensable stuff. So now onto the recipe:

Notes:
------
Steep grains at 155F for 40 minutes, sparge with 1 gallon of 190F water

Add extra light DME after boil

-------------------------------------------------------------------------------------

Now, I forgot to check the Alpha Acids on my hops and reenter, but I am almost positive my Northern Brewer Pellets were 7.5% so the bitterness will be slightly lower(about 3 points probably, not that bad). Here is the first runnings after I steeped the grains, black as night.

Image Hosted by ImageShack.us

And here is the grains in total, my steeping bag was just big enough to accommodate everything. I sparged over the strainer into the original pot I used to steep(not the one pictured).

Image Hosted by ImageShack.us

The propane tank I had outside was really low, so I went out and got it exchanged, and I was ready to go with the boil. I kept my floating thermometer in the boil kettle initially so I would know when the hot break was coming, and I would be able to get some other stuff done, such as sanitizing the fermenter; weighing out the light DME in a bag to pour in immediately post boiling; and weighing out my hop additions since they are .5 ounces and the hop bags are 1 ounce. It boiled over twice, as I was unable to tame the break even with controlling the burner and using a spray bottle. Overall it wasn't that bad because I slightly overfilled the boil anyways(I put 6.5 gallons in before I added the Light DME which ultimately raised the final boil volume). But after all of that was done, it didn't flare up ever again, even after I added the hop additions. After I added the 1 ounce of northern brewer:

Image Hosted by ImageShack.us

The color looks fantastic in my opinion, i checked it with the spoon during boiling, and when I took my gravity reading. Also not included in the recipe above, I added a tsp of Irish moss, because there is no reason not to as it will help with clarification. I also added the chiller at 15 minutes and waited for it to boil again before I started the timer again.

Image Hosted by ImageShack.us

One slight mishap occurred during chilling, I had turned up the hose too much and the inlet hose popped off and let in a small amount of water to the kettle. I am not going to worry about it though because it was negligible. I just turned off the water and reattached the hose and tightened both clamps down and continued chilling at a low pressure, stirring occasionally with my spoon which was sitting in sanitizer. It actually cooled it down a little too far(to 67F) but that is absolutely nothing to worry about right there. I then poured the whole thing into the bucket(hops and all accidentally, but I checked homebrewtalk and it said that its not going to matter because I will just have more trub to rack off of anyays). There was a ton of foam on the top. I got my decanted 3L starter that was warmed up and pitched it afterward. I pulled a sample for a gravity reading before I pitched the yeast. 1.066 OG at 69F! Not bad considering the boil overs and the slightly increased batch size.

Image Hosted by ImageShack.us

I affixed the lid and was ready to go! I made sure to stop by the local homebrew supply the day prior and pick up a siphon hose to fit over one of the econolocks I had as a blow off tube. With all of that foam it was bound to happen. Here we are ready to go sitting in the basement:

Image Hosted by ImageShack.us

Everything was clean and sanitized including the airlock, hose, and jug. I pitched the starter of White Labs English Ale WLP002 at 3PM or so, and by 10 PM it was already going full force with blow off as well!

Image Hosted by ImageShack.us

So everything seem to be going OK now. The lid is distended because of the pressure, but the CO2 is coming from the airlock only. I am going to rack it off the trub when fermentation slows down, and add vanilla beans. This should turn out fantastic when it is all said and done!

-----------------------------------------------------------

The DIPA I brewed on Wednesday night blew off of the fermenter by morning, which was 8 hours after I pitched the yeast

Image Hosted by ImageShack.us

I am going to rack it off into a 3 gallon better bottle probably tomorrow and wait til it clears up to add the dry hops for 7 days. Sure smells good in there haha. I cleaned up the mess Thursday night and it really hasn't made any more mess after that so I should be fine.

-----------------------------------------------------------

Here is an update on the Dry stout I brewed last month. I bottled it about 11 days ago. It fermented for 2 weeks and bottle conditioned for 10 before I had some, with cold crashing the same day as I had it. The FG only came down to about 1.022, which was higher than I wanted it, but I shouldn't have expected much from the dry yeast packets. Nothing amazing, but it is pretty good stuff, a little bit of off flavors on first taste but they smooth out afterward. A lot of chocolate flavor. Very nice dense head and good head retention and great glass lacing. Very smooth drinking.

Some thick and foamy lacing on the glass, very nice. Aromas of grapes, lemon, honey, grass and spicy yeast. Taste of slightly tart lemon, grapes, honey, spices, and a bit of yeast. There is a bitterness that shows up after the finish that lingers for a bit with spicy flavors. It has a fairly high carbonation with a medium body. Very smooth drink, with no alcohol noted other than a very small warming after the finish. Overall an incredibly enjoyable saison. Delicious.

Probably the best saison I have had yet. Definitely impressed with this and it is my first beer from The Bruery. Fantastic.

2010 12 ounce bottle into snifter. Pours clear dark red color with a fairly dense 1 finger off white head with good retention, that reduces to a lacing cap. Some very thick lacing on the glass. Aromas of strong bourbon, molasses, caramel, dark fruits, honey, and some booze. Some very strong aromas. Taste of raisins, honey, molasses, toffee, caramel, and other fruits. Some very light bitterness on the finish that almost goes unnoticed. Also has a fairly dry finish, but there is some lingering sweet notes after the finish with a fairly large alcohol warming. Incredibly smooth for its alcohol content(11.7%) and there is absolutely no alcohol burn going down. Full bodied with medium-low carbonation. Overall a very enjoyable brew, I would like to seek this out and age it for a while to see how it is with age on it.

A very delicious beer from North Coast. I should definitely cellar a couple of these in the future.

AROMA
8/10 APPEARANCE 5/5 TASTE 9/10 PALATE 4/5 OVERALL 18/20

12 ounce bottle. Pours very dark brown color with a 2.5 finger dense tan head with incredible retention, with some very nice lacing on the glass. Aromas of chocolate, coffee, roasted malt, caramel, and some light citrus notes. The aromas are quite strong and inviting. Taste of strong coffee and dark chocolate; with roasted flavors, light caramel, and some smoke. There is a quite prominent bitterness that is present on the finish that lingers with chocolate and roasted flavors. The overall balance is fantastic between the sweetness and the bitterness. Incredibly smooth and creamy mouthfeel, medium carbonation and medium-full bodied. No alcohol presence detected at all other than a small warming after the finish. I have been seeking this out for a while, and I finally found it in 6 packs so I had to take the plunge for the whole pack. It is well worth the price for all 6, because this is outstanding, and so delicious.

As if I could get tired of drinking anything from Founders. I really could never find these in singles, so I just went ahead and bought a six pack, because I asked a local store owner to order it a couple months back. Plus I pretty much knew I would love it anyways, even though I had never had it previously. I think I will keep at least one six pack around at all times of a good beer that I really enjoy to session along side my rated beers. When the six pack runs out I will decide which six pack to get after that.

AROMA
7/10 APPEARANCE 5/5 TASTE 9/10 PALATE 4/5 OVERALL 18/20

22 ounce bottle into snifter, 2010 release. Pours clear dark brown color with a dense 2 finger light tan head with great retention that reduces to a fairly thick lacing cap that lasts for the whole glass, and leaves some nice glass lacing. Aromas of chocolate, coffee, roasted malt, vanilla, and a bit of dark fruits. Aromas are a little weak here. Taste of strong chocolate, coffee, and roasted malts with some vanilla. There is some slight bitterness on the finish that lingers for a bit with coffee, chocolate, and roasted flavors lingering longer than the bitterness. Medium carbonation and medium bodied. Very smooth and creamy mouthfeel, with no alcohol presence noticed. Overall a delicious stout with a lot of good balanced flavor, and another winner from Lagunitas. Fantastic.

I definitely enjoyed this one highly. Reminded me of Founders Breakfast stout a bit as well. Very delicious and drinkable.

Second Batch, DIPA

I bottled my chocolate stout last week, it tasted a little weird, but was fairly smooth uncarbonated. I will see how it turns out after bottle conditioning. The PET bottles are fairly firm now and the yeast is chilling out on the bottom of the bottles now. I batch primed it in a 3 gallon water dispenser I found around the house. I tried to siphon it with a cheap siphon but it didn't work so well, so I probably aerated it a small amount in transfer of the rest. There was A LOT of sediment in the bottom of the fermenter. Some probably got into the bottling, but I am not too worried right now. It is my first batch and all.

the 1 liter PET bottles capped up. I lost 1 cap so I stole a diet Mtn Dew cap off my a 20 oz bottle and it seemed to work fine at keeping it airtight

I will update on the results of the chocolate dry stout very soon(within the next week)

I went to my local Homebrew Supply this week and got a ton of supplies. I got all the ingredients for the porter, plus a 1 stage bucket fermenter kit with a bottling bucket and all the accessories(floating thermometer, bottling spigot, capper etc) and a wort chiller. I will be brewing it outside on a turkey fryer as it will be my first 5 gal batch. I will be capping regular 12 and 22 ounce bottles in the future.

Onto the DIPA. I went to my Homebrew supply a couple weeks ago and they said that Amarillo hops were unavailable everywhere now, so I changed all flavor and aroma hops to cascades, and changed the recipe a tad.

Amber Extract added after boil.

I made my starter in a sanitized gallon distilled water jug for this one, and I bought a gallon glass jug at the homebrew supply this week for the porter starter.

So I steeped the grains in 2 qt of water as close to 155 as I could for 30 minutes. I used a digital stick thermometer to keep track as I was raising the water temp.

Image Hosted by ImageShack.us

I then sparged the grain over a strainer with 1 qt of 187 degree water to finish it off. and added the rest of the water to begin my boil, and added the X-light DME before bringing it to the boil.

Image Hosted by ImageShack.us

I then brought it to a boil, and added my 1 oz of Centennial, which then caused some massive boil activity. I have watched quite a few Youtube videos on brewing lately, and one channel, which was "terpsichoreankid", suggested keeping a water spray bottle close by to tame the break. A fantastic tip, because It happened 3 times tonight. 2 in my boil, and once in my boil for my starter for the porter.

After I added Centennials, and the boil calmed down after spraying with water:

After I added the last Cascade addition at 1 min, it went really crazy
Image Hosted by ImageShack.us

After all that settled down I added the LME to finish off and brought it to a brief boil to sanitize. I also added hot water to remove most of the extract from the 3.3 lb can. Earlier tonight, I decanted the gallon jug of the wort and left some inside to keep the yeast in suspension to pour out. I got my OG reading which was 1.084 at 76.4F.(my hydrometer from Homebrew supply only goes to 1.080 so I estimated) I did a calculation online to see the real reading, as my Hydrometer is calibrated at 70F. It came out to 1.085. Super close as the Beersmith calcs say I should have 1.086!

Image Hosted by ImageShack.us

I chilled my batch in the sink with ice and cold water, changing the water a few times, and then pouring the wort into the fermenter that had cold water over a wire strainer to remove most of the hop particles. I had to clean the strainer 4 times to finish the pour! I am going to rack this next week to a 3 gallon Better bottle secondary onto 1 ounce of cascades for dry hopping.

I can't wait to see how this turns out, I kept a critical eye on sanitation after the boil, so I should be alright. The porter brew will be completed this weekend as I plan to. The recipe is:

AROMA
9/10 APPEARANCE 4/5 TASTE 9/10 PALATE 4/5 OVERALL 17/20

12 ounce bottle into tulip, Batch 5, 2007 vintage. Pours clear dark copper-red color with a fairly dense 2 finger off white head with good retention that reduces to a thin lacing ring, no glass lacing. Aromas of strong caramel, molasses, roasted malt, vanilla, and dark fruits. Some great and strong aromas here. Taste of strong caramel, molasses, dark fruits, vanilla and a bit of chocolate. There is a very sweet finish with almost no bitterness, but the sweet flavors of molasses and dark fruits linger for a bit after the finish. Alcohol is well hidden the the taste, but there is a huge alcohol warming after the finish, I completely expected that. Very huge full body with medium-low carbonation. Very thick and creamy mouthfeel, with a very smooth drink ability for it’s 16.42% alcohol level. Overall, for a Belgian style, this is outstanding. A ton of great flavor balance, and very smooth drink ability for such a high gravity beer. Fantastic.

This one definitely aged gracefully, as I was lucky enough to find an refrigerated 2007 vintage at a beer store in Fort Wayne, IN last November. No idea how the fresher batches would fare, but this one was fantastic.

Häagen-Dazs Spiced Peach Crumble

Image Hosted by ImageShack.us

A very surprising find for me a couple of weeks ago. This is a Walmart Exclusive flavor. It isn't listed on the website so there is why I was surprised. It is nutmeg and cinnamon spiced peach ice cream made by cooking the peaches, with buttery crust pieces mixed in. The first thing I noticed when I dug in is the crust chunks are surprisingly large. You can see one in the picture. They vary in size throughout the pint, but are still fairly good sized, and impart some fantastic flavor. They also are quite crumbly in texture, and are just outstanding in my opinion, a great pairing for the ice cream itself. The peaches are more of small tidbit chunks, but you can still taste them, and feel the texture they impart to the ice cream. The peach ice cream also has a very strong peach flavor to it. The spices are in the background, but the support the peach flavor amazingly. The ice cream texture with some microwaving for softening is also fantastic. Very creamy. Overall, we have an outstanding new flavor from Haagen Dazs once again.

12 ounce bottle into snifter. Pours slightly hazy dark red color with a 1 finger foamy off white head with decent retention that reduces to a thin lacing cap. Aromas of dark fruits, brown sugar sugar, spices, caramel, and some light bourbon. Taste of caramel, dark fruits, molasses, toasted malt and some bourbon. Almost no bitterness noticed on the finish. Fairly dry finish, but there is some lingering tastes on the finish of caramel, roasted flavors, and light bourbon. No alcohol really noticed at all except for a light warming on the finish, plus the bourbon flavor. Very smooth for its alcohol content and has well balanced flavors as well. Has a medium-full body and medium carbonation. Overall some impressive stuff, definitely enjoyed this one.

I don't get to enjoy collaboration beers very often, but this one was very good stuff. Luckily whenever Stone does a collaboration it is basically available everywhere.

12 ounce bottle into tulip. Pours slightly cloudy red-orange color with a 1.5 finger foamy off white head with decent retention. Very minimal glass lacing. Aromas of cherries, banana, dried fruits, candi sugar, and vanilla; with a bit of spices and alcohol. Taste of banana, dark fruits, candi sugar, and some caramel; with light spices and a bit of bourbon. Very sweet flavor with no bitterness noticed at all. The finish is fairly dry, with only a small bit of lingering sweetness. Incredibly smooth finish with no alcohol noticed except for a slight warming with a light alcohol bite after the finish. I was extremely surprised at the smoothness for it’s alcohol content. Medium carbonation and creamy full body. Overall, this quad was quite impressive, though not very complex, it has a very nice flavor balance with a very smooth drinkability for its alcohol level.

This definitely was a surprisingly good Quad. I was hoping to not get a booze bomb like with the Blithering Idiot, and I did not.

7/10 APPEARANCE 4/5 TASTE 8/10 PALATE 4/5 OVERALL 16/20

11.2 ounce bottle into tulip, Batch 352, 12/19/10. Pours clear dark brown color with a dense 2 finger tan head with great retention that reduces to a lacing cap. Some fairly decent glass lacing. Aromas of citrus, roasted malts, coffee and some caramel. Taste of coffee, chocolate, roasted malt, citrus, and caramel. Might also have some smoke in there as well. There is a fairly prominent citrus bitterness on the finish, but it is not overly strong, and it is balanced out well with the rest of the beer. The bitterness lingers for a bit after the finish with roasted flavors. The mouthfeel is extremely creamy and smooth, the alcohol is hardly even noticed other than a very small hint of a warming after the finish. Medium carbonation and medium-full bodied. Overall a very tasty beer, I am fairly impressed.

Overall some enjoyable stuff. Also technically my first BrewDog beer, even though it is a collab. I will have to find some more, most of them are available, except for the ones over 12% (Ohio sucks just a little bit, but we still get a ton of different beers.)

8/10 APPEARANCE 4/5 TASTE 9/10 PALATE 5/5 OVERALL 16/20

750 ml bottle into snifter, 2011 1C. Pours crystal clear orange amber color with a dense 1 finger off white head with very good retention, that reduces to a lacing cap that lasts for the rest of the glass. Aromas of strong orange and lemon, with caramel, spices, and some pine notes. Taste of caramel, orange, and lemon; with a touch of chocolate and toast. There is a decent amount of bitterness that comes in after the finish that lingers with citrus and light toasted flavors. Great balance here between the malts and hops, one does not really overpower the other. Alcohol was not noticed at all in taste or finish. Medium carbonation and fairly full bodied. Very smooth mouthfeel as well. Overall, even though this wasn’t as bitter as I was hoping for it was still some delicious stuff. I would definitely get it again.

Overall some great stuff. I will probably get the next batch to see how it is, most people on the forums said that this batch was sweeter than usual apparently.
